Inspired by a very special someone, these energy bites are easy to make, take less than 10 minutes and consist of whole foods to fuel your body & put a bit of pep in your step. And they taste amazing!
First, the start of the show, je te presente: Goji.
Goji Berries aka Wolf Berries - known as a superfood, goji berries are tart, bright red berries (typically sold dried as we'll use in today's recipe, but if you ever get the chance to try one fresh off the bush, do it!) packed with antioxidant power and vitamins, especially A & C which play major roles in immune function. The plant is a native to China (I have seen them growing in sunny LA) and known in Chinese herbal medicine for improving vision, liver & kidney function.
The base of this recipe is the almighty date. Another powerful food (a little goes a long way) for the energy the natural sugar provides, the multitude of minerals (copper, potassium & B6 to name a few) that are critical for brain body function and fibre. The natural sugar component is major for regulating blood sugar. Tahini, milled sesame seeds, pairs beautifully with the sweetness from the dates & dessicated coconut brings in a rich, nutty, textured addition to round out our energy bite base.
If you are a chocolate lover (like myself), I'd recommend cacao nibs for an extra crunch. They also contain flavanoids (among other things, namely caffeine & antioxidants) which studies show are good for heart health. Not a necessity, and the inspirateur of the recette veto'd the nibs, but I persist in my chocolatey ways.
And without further ado, here is the recipe:
You will need a food processor (you could get away with mixing most of the ingredients by hand, but the blending of the dates is essential, perhaps a blender would do, but the ideal is a food processor. I resisted many years to invest in one, and then found out they are not very expensive at all! So many years of struggling with the blender. Blenders are great, but certain recipes just do better with a food processor. This is one of those).
Ingredients
This is one of those recipes that you will not fuck up if aren't exact. General rule of thumb as follows, but one need not measure
Base: Equal parts (pitted) Dates* // Tahini // Desiccated coconut (make sure it's unsweetened)
(I did approximately 1 cup of each)
*If your dates are not to freshy fresh, soak in warm water for 5min and drain. & always check for pits!
Goji Berries (approx 1/2 c)
Desiccated coconut (approx 1/4 c)
Cacao nibs (optional - approx 1/4 c
Blend base ingredients in food processor (dates, tahini & coconut)
Add in goji berries to liking & a little more coconut for texture + cacao nibs (opt)
Shape into small balls/bites (mixture will come together in your hands, add a bit more tahini if too crumbly)
Store in fridge for optimal taste & longevity

Notes:
Costco sells great bulk, pitted dates (Hadleys brand). I've also used Joolies, which were great (linked above)
Goji berries - I like Navita or Natierra brand (as used in Reel)
Aim for organic ingredients wherever possible (ew pesticides) & double check the ingredient list, you don't want any hidden sugar, the dates will do all the heavy lifting in that department
